FRUTTA MARTORANA
These fruit-shaped marzipans are said to have originated in the Martorana monastery in Palermo, near today’s Church of Santa Maria dell’Ammiraglio, where the nuns would take their time to shape and colour the fruits inspired by their lush monastery garden.
Today, they are mostly displayed in shop windows to show the artisanal skill of the confectioner. Popular with tourists, they are rarely sold to locals because they are sweeter and more expensive than other traditional marzipans that are less labour-intensive to make.
Those other marzipans, however, usually contain egg whites. And whilst Frutta Martorana is indeed incredibly sweet, the fact that these marzipans can be made by mixing local almonds with sugar, lemon zest and some dessert wine opens up exciting possibilities for all plant-based sweets.
Some confectioners use shellac, which is derived from insects, to give the fruits a shiny finish. Ask before ordering if you want to make sure that the Frutta Martorana is completely vegan.
