Southwestern Lasagna & Creamy Avocado Ranch sauce
Ingredients

2 garlic cloves
Baby spinach (6. oz)
1 Rotisserie chicken ( about 3-4 cups chicken)
1 can of black beans (15oz)
2 cups of corn kernels
2 roasted bell peppers
2 roasted poblano peppers
Small bunch of cilantro
1 tsp smoked paprika
1 tsp ground cumin
1/2 Tbsp garlic powder
1/2 Tbsp onion powder
1/2 Tbsp chicken bouillon
1 tsp Mexican oregano
1 tsp black pepper
2 1/2 cups of heavy whipping cream
9 lasagna sheets - Corn or Flour tortillas
16oz pepper jack cheese
1 cup panko crumbs + 1 stick of butter
Bake at 375 for 30-40 minutes
Avocado ranch sauce
1 Avocado
1 Jalapeño
1 cup of Ranch
Cilantro
Juice of half a lime
