Dahi Pyaj ki Sabji
Preparation time: 3-4 mins
Cooking time: 6-8 mins
Serves: 3-4
Ingredients:
4 large onions
1 cup yoghurt
1 tbsp chopped ginger
1 tsp chopped green chilies
3 tbsp oil
½ tsp cumin seeds
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
Salt to taste
Coriander leaves
Method:
Finely slice the onions.
Heat the oil in a pan. add the cumin seeds. As the seeds splutter, add the sliced onions and saute over high heat for 3-4 mins. Add salt and reduce the heat. Cook till lightly golden. Whisk the yoghurt well.
Add the chili powder and turmeric powder to the onions. Switch off the gas. Add the yoghurt and stir continuously till the yoghurt is well mixed. Return to flame and simmer gently till it comes to a boil.
Add coriander leaves and serve.
Malai Pyaj ki Sabji
Preparation time: 3-4 mins
Cooking time: 6-8 mins
Serves: 3-4
Ingredients:
250g baby onions
1 cup malai
3 tbsp oil
1 tbsp chopped ginger
1 tsp chopped green chilies
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
Salt to taste
1 tbsp amchur powder
Coriander leaves
Method:
Peel the baby onions. And mark into quarters. Cut only halfway.
Heat oil in a pan and add the onions. Add salt and allow to cook over medium high flame for a few minutes. Add ginger, green chilies, red chili, turmeric and 2/3 cup water and simmer for a few minutes. Add beaten malai or yoghurt. Mix well and simmer for 2 minutes. Garnish with coriander leaves and serve.
Besan Pyaj ki sabji
Preparation time: 3-4 mins
Cooking time: 6-8 mins
Serves: 3-4
Ingredients:
4 large onions
1 tbsp chopped ginger
1 tsp chopped green chilies
3 tbsp oil
½ tsp cumin seeds
½ tsp fennel seeds
1 tsp coriander seeds
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
1 tbsp amchur
Salt to taste
1 cup besan
1 tbsp kasuri methi
1 tsp garam masala powder
Coriander leaves
Method:
Peel and chop the onions into large chunks.
Heat oil in a pan and add the cumin, fennel, coriander seeds.
Add chopped ginger, green chilies and then the onions.
Sauté the onions till golden.
Take besan in a plate. Add salt, red chili powder, 1 tbsp oil and rub well.
Sprinkle 1 tbsp water and rub well to resemble coarse bread crumbs.
Add the besan to the pan and mix well. Cook for a few minutes till the besan is well cooked. Add powdered spices, kasuri methi and mix well. Sprinkle garam masala, garnish with coriander leaves and serve.
