_Ingredients:_
- 2 eggplants
- salt
- 2–3 potatoes
- cooking oil for frying
- ¼ stick butter (🌱 vegan butter for the vegan version)
- ⅓ cup flour
- 2 cups milk (🌱 plant-based milk for the vegan version)
- salt & pepper to taste
- 1 pinch of nutmeg
- 2 cups tomato sauce
- ½ cup shredded cheese (🌱 vegan cheese for the vegan version)
*1. Prepare the vegetables*
Slice the eggplant, salt each slice, let them sit for about 15 minutes to remove the bitterness, then rinse and dry each slice. Heat some cooking oil in a pan, then peel and slice the potatoes. Fry the eggplant and potato slices until golden brown on each side.
*2. Make the white sauce*
Melt the butter in a pan, stir in the flour until combined, then add in the milk, stirring constantly until the mixture becomes smooth and creamy. Season with salt, pepper, and nutmeg.
*3. Assemble the moussaka*
Preheat the oven to 350°F and grease a baking pan. Make a layer of fried potato slices on the bottom of the pan, then layer the eggplant on top. Spoon some tomato sauce over the eggplant layer, then repeat the same layering process with the remainder of the ingredients. Pour the white sauce on top, then transfer the baking pan to the oven and bake at 350°F for 35–40 minutes.
