Rice flour - 1 1/2 cup
Jaggery - 1 cup
Grated coconut - 1 1/2 cup
Cardamom - 3 to 4 pods.
Dry ginger powder - 1 tsp
Salt - 1 or 2 tsp
Method
First we have to cut and wash the turmeric leaves.
Cut the two edges of the leaf and keep aside.
Heat water in a pan add jaggery and boil them well.
Then grated the coconut and set aside.
Ones the jaggery water is well boiled
Remove from Fire and set aside.
Crush cardamom and set aside.
Heat ghee in a pan add jaggery water.
Boil them well,add grated coconut and mix them well.
Then add cardamom powder and dry ginger powder combine them well.
Cook for few minutes till the jaggary syrup is completely coated with grated coconut.
Remove from fire and set aside.
Heat water in a steamer .
Take a bowl add rice flour and salt .
Add water little by little ,mixing thoroughly, make a smooth dough and set aside.
Take a lemon size dough and flatten over a turmeric leaf with fingers.
Then place a small amount of jaggery mix and spread it .
Again fold half and press gently on sides.
Then continuing the same process remaining dough.
Then place the ela ada in a steamer .
steam them well for 8 to 10 minutes.
Remove the lid and check wheather the ela ada is well cooked.
ones it is well cooked remove from fire and set aside.
serve and enjoy Turmeric ela ada with tea or coffee..
