Creamy Chicken
Ingredients
For Velveting
CHICKEN BREAST | चिकन ब्रेस्ट 300–350 GRAMS
SALT | नमक A LARGE PINCH
BLACK PEPPER | काली मिर्च A LARGE PINCH (FRESHLY CRUSHED)
WATER | पानी 6–8 TBSP (ADDED GRADUALLY)
OIL | तेल 1 TBSP
CORN FLOUR | कॉर्न फ्लोर 2 TBSP
Cooking the Chicken
OIL | तेल 1–2 TBSP
GARLIC | लहसुन 1 TBSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2 NOS. (CHOPPED)
Cream Sauce & Final Cooking
BUTTER | मक्खन 2 TBSP
REFINED FLOUR | मैदा 2 TBSP
MILK | दूध 500 ML (ADDED GRADUALLY)
SALT | नमक TO TASTE
OREGANO | ऑरेगैनो A PINCH
RED CHILLI FLAKES | रेड चिली फ्लेक्स A PINCH
BLACK PEPPER | काली मिर्च A LARGE PINCH (FRESHLY CRUSHED)
Method:
Start by cutting the chicken. Slice the breast into thin pieces, then cut against the grain into strips. Transfer them into a bowl.
Now we will velvet the chicken for that, add salt, freshly crushed black pepper, and water gradually about 6–8 tablespoons added in stages.
Using the back of a spoon, stir vigorously after each addition. The chicken will slowly absorb the water and begin to feel slightly slimy as if you've added egg whites.
Repeat this process 3–4 times until the chicken looks hydrated and has a light, almost egg white-like coating on it.
Add oil and corn flour and mix well until a light coating forms on all the strips.
Heat a pan on high flame and add oil.
Once hot, add chopped garlic and green chillies and stir briefly, do not cook them too long.
Add the velveted chicken and cook on high flame, stirring in between, until just cooked through and still juicy. Transfer to a bowl immediately.
To make the cream sauce, heat a sauce pan, add butter and let it melt.
Once melted, reduce the flame to low and add refined flour. Cook the flour slowly over low flame, stirring continuously, until it reaches a sandy texture.
Now add the milk gradually in 2–3 batches, whisking well after each addition and scraping the edges of the pan to ensure no lumps form.
Once the first few batches are smooth, add the remaining milk all at once and whisk into a completely smooth, lump-free sauce.
Add the cooked chicken back into the sauce along with salt, oregano, red chilli flakes, and freshly crushed black pepper. Stir well and cook for 1–2 minutes. Taste and adjust salt.
Your delicious Creamy Chicken is ready.
Lemon Coriander Rice
Ingredients:
BUTTER | मक्खन 2 TBSP
OIL | तेल 1 TSP
GARLIC | लहसुन 1 TBSP (CHOPPED)
ONION | प्याज़ 1 NO. (SLICED)
OREGANO | ऑरेगैनो A PINCH
RED CHILLI FLAKES | रेड चिली फ्लेक्स A PINCH
FRESH CORIANDER | हरा धनिया A LARGE HANDFUL (CHOPPED)
COOKED RICE | पके हुए चावल 3–4 CUPS
SALT | नमक A PINCH
LEMON ZEST | नींबू का छिलका OF 1 LEMON
LEMON JUICE | नींबू का रस OF 1/2 LEMON
SALT | नमक TO TASTE
Method:
Heat a pan on high flame and add butter and oil.
Once the butter melts, reduce the flame to low and add chopped garlic, sliced onion, oregano, and red chilli flakes. Increase the flame and cook until the garlic is just done and the onions start to turn light golden brown.
Add the fresh coriander and stir briefly.
Add the cooked rice and a pinch of salt and mix well.
Switch off the flame. Add lemon zest, only the yellow part, avoid the white part, then squeeze in the lemon juice.
Add salt to taste and mix everything well so the rice is evenly coated. Cook for 3–4 minutes and the Lemon
Fresh and delicious Lemon Coriander Rice is ready.
TO SERVE:
Serve the Creamy Chicken over the Lemon Coriander Rice or you can even plate it half and half like I do.
