CHINO’S FILIPINO-STYLE HAMONADA WITH SPICED RUM
Ingredients:
3 pcs Chino’s Deli ham, sliced thick
1 cup pineapple juice
¼ cup rum
¼ cup dark brown sugar
2 tbsp honey
1 tbsp soy sauce
1 small onion, finely chopped
3 cloves garlic, minced
1 bay leaf
½ tsp whole peppercorns
1 tsp cinnamon
½ tsp smoked paprika
1 star anise
1 tbsp butter
½ cup pineapple chunks
Procedure:
1. In a pan over medium heat, melt the butter and add the pineapple chunks. Sprinkle a bit of brown sugar and cook until golden and caramelized. Set aside.
2. In the same pan, sear the Chino’s Deli ham slices for 1-2 minutes on each side until slightly crisp. Remove and set aside.
3. In the pan, sauté onions and garlic until soft and fragrant. Pour in the spiced rum and let it simmer for about 1 minute to cook off the alcohol.
4. Add pineapple juice, brown sugar, honey, soy sauce, bay leaf, peppercorns, cinnamon, smoked paprika, and star anise. Simmer for 10-15 minutes until slightly thickened.
5. Return the ham slices to the pan and let them soak up the sauce for 5 minutes. Add the caramelized pineapple and simmer for another 2 minutes.
6. Plate the hamonado with extra sauce, garnished with fresh thyme or parsley.
