Order my new Cookbook "Healthy My Way" https://www.amazon.com/Healthy-My-Way-Flavor-Cookbook/dp/0593580184/ref=sr_1_1 Here’s the recipe to make Vietnamese Beef Pho Ingredients : 2 pounds of beef bones 4 pounds of beef ribs 2 pounds of beef shank 2 pounds of beef short ribs 3 onions 4 ounces of ginger 2 ounces of rock sugar or 4 tbsps of table sugar 1/3 cup fish sauce (may need more after taste) 2 tbsps of salt (may need more after taste) 1 spice bag of coriander seeds, fennel seeds, star anise, clove and black cardamon. 1 package of meat balls 1 pound of sliced round eye steak (you can also use sliced sirloin) large package of rice noodles For Garnish: bean sprouts Thai basil cilantro green onions limes For Sauce: Sriracha Hoisin Instructions: Fill a large pot with water and parboil the beef bones, beef rib, beef shank and beef short ribs for 15-20 minutes. Drain and rinse off the meat to remove all the scum and impurities. Fill pot with fresh water and add back the meat. Bring to a boil and down to low. Add onions, ginger, rock sugar, salt, fish sauce and spice bag. Cover with a lid and cook for 2 hours. After hours remove the beef bones. Cover with the lid and cook for another 1-2 hours. At this point I like to add more water because some evaporates. 3-4 cups more water. Cut meat balls in half and add to pho broth. Taste broth if it needs any more salt, fish sauce or sugar. Heat up large pot of water and boil rice noodles for 30-45 seconds, drain and rinse under cold water. To assemble add rice noodles to a bowl, sliced beef, garnish, choice of meat from the pot, Strain broth into bowl.
