(spoiler: it's delicious 😋) In the very first episode of Dish Up Disney, our chef Martyn Odell @lagomchef takes on the iconic mystery dessert from Beauty and the Beast: The Grey Stuff. Martyn dives into the origins of the dish, explores possible real world inspirations, and speaks to food experts to figure out what The Grey Stuff could actually be. Then it’s time for the ultimate test: can he recreate it in a way that looks (and tastes) as good as Lumière promised? Ingredients: 250g mixed mushrooms (ceps, morels, portobello, chestnut) 30g dried mushrooms (porcini or mixed) 30g butter 1 shallot 2 cloves garlic 2 sprigs thyme 100g cream cheese 75g mascarpone Salt and pepper, to season Crackers, to serve Method: In a bowl, soak the dried mushrooms in 50-75ml boiling water. Set aside and leave for 20-30 minutes. Clean mushrooms by gently scraping with a knife, or brushing with a pastry brush. Roughly chop. Peel and dice the shallot. Peel and slice the garlic cloves. In a frying pan over a medium heat, add the butter. Once melted, add the shallot and sweat for 8-10 minutes. Once the shallots are soft, add the garlic and cook for 1 minute. Turn up the heat and add the mushrooms. Cook for a few minutes, stirring to make sure they don’t catch. Add the dried mushrooms and soaking liquor. Pick some thyme leaves and add them to the pan. Season with salt and pepper. Cook until all the liquid has been absorbed then take off the heat and leave to cool. In a high powered blender, blend the mushroom mix, cream cheese and mascarpone to a smooth paste. Taste and season with salt and pepper. You can adjust the texture by adding more cream cheese or mascarpone. Spoon the grey stuff into a piping bag with a nozzle. Pipe onto crackers. It’s delicious!
