RECIPES FEATURED GOBI MANCHURIAN Ingredients for Batter Cauliflower ½ kg boiled for 5 mins with salt Flour ½ cup Salt ¼ tsp Black pepper ½ tsp Corn flour 2 tbsp Egg 1 Other Ingredients Onion 1 finely chopped Oil ¼ cup Green chilies 2 chopped Ginger garlic paste 1 tbsp Vinegar 2 tbsp Soy sauce 2 tbsp Ketchup ¼ cup Chili powder 1 tsp Chili garlic sauce 2 tbsp Sugar 1 tsp METHOD Make batter with the given ingredients. Boil cauliflower, drain, dip in batter, deep fry till golden, keep aside. Heat oil, fry chopped onion, add green chilies, ginger garlic paste, all the sauces and seasonings, toss in the sauce, garnish with spring onion leaves. VEGETABLE CUTLETS Ingredients Potatoes peeled, mashed and boiled ½ kg French beans finely chopped and boiled 1 cup Carrot cut into tiny pcs and boiled 1 cup Sweet corn ½ cup Green peas boiled ½ cup Green chilies chopped 6 Garlic paste 1 tsp Salt and pepper 1 tsp each Allspice ½ tsp Crushed red pepper ½ tsp Coriander leaves 2 tbsp Curry leaves chopped 2 tbsp Bread crumbs 1 ½ cup Flour to coat Oil for frying METHOD Heat oil, add curry leaves, garlic paste, all the veggies, seasonings, add mashed potatoes, mix well, make cutlets, dip cutlets into flour batter, coat in bread crumbs, fry in oil, serve hot with ketchup. GHUTWA CHICKEN DAAL Ingredients Gram lentils ¾ cup White lentils 2 tbsp Water 2 cups Chicken 4-5 pieces Salt 1 tsp Chili powder 1 tsp Turmeric ½ tsp Crushed cumin 1 tsp Crushed red pepper 1 tsp Clarified butter 2 tbsp METHOD Cook all the ingredients together in a pressure cooker for 20 mins till daal and chicken tender. Remove chicken from daal and shred chicken. In a sauce pan, add ½ cup ghee, add 1 chopped onion, add chopped tomato, ½ tsp salt, ½ tsp crushed zeera, ½ tsp crushed red pepper, ginger garlic paste 1 tsp, when onion golden add in the tomato with seasonings, add in cooked and shredded chicken, now add the tomato and chicken mixture to the tender daal and let it cook on slow flame. Prepare tadka with ½ cup ghee, add green chili julienne 4, remove daal in a serving bowl, add ¼ tsp haldi and ½ tsp zeera and add this tadka to the daal.
