Ingredients:
For Yakhni :-
750grm meat
1 tbsp coriander seeds
1 tbsp fennel
1 black cardamom
2-3 green cardamom
3-4 cinnamon sticks
8-10 cloves
½ tsp peppercorns
1 piece of mace
2 garlic bulb
1 medium sized onion
4-5 green chillies
3-4 bay leaves
a bunch of coriander
1½ tsp salt
4 glasses of water
•1 whistle on high flame then 4-5 on low heat (till the meat cook well)
• when done, discard the whole spices and keep the stock aside.
FOR PULAO :-
750grm golden sela rice (soaked for 2 hours)
1 cup oil
2 medium sized onions (fry these for 2-3 mins)
½ tsp peppercorns
1 tbsp cumin
4 green cardamom
2 black cardamom
2 cinnamon sticks
5-6 cloves
2 star anise
•after 2-3 min add 2 tbsp ginger garlic paste
5-6 crushed green chillies
2 large sized tomato
1 cup curd (200grm)
1 tsp crushed red chillies
1 tsp garam masala
• after a min add in prepared stock water and soaked rice (drain the water before adding) (In 3 glasses of rice we have added 4 glasses of stock water.)
• add 1 lemon juice, 4-5 green chillies and 1½ tsp salt.
•cover and cook till the water dries upto the level of rice
• 8 mins later add 2 tbsp clarified butter and ½ cup fried onions as shown and cover, and cook on low heat for 6-7 mins and leave it in dum for 15 mins.
• after 20-25 mins, serve it hot with raita or chutney and enjoy ❤️
