For the Khaman Dhokla
• 2 cups gram flour (Besan)
• 2 tbsp additional water, if needed (Pani)
• ½ tsp salt (Namak)
• 1¼ tsp citric acid / lemon crystals (Nimbu Ke Phool)
• 3 tbsp sugar (Cheeni)
• 2 tbsp oil (Tel)
• 2–3 pinches asafoetida (Hing)
• Less than ¼ tsp turmeric powder (Haldi)
• 1 tsp baking soda (Baking Soda)
• 1–2 tsp water, for mixing the soda (Pani)
For the Tempering
• 2 tbsp oil (Tel)
• 1 tsp mustard seeds (Rai)
• 3–4 green chilies, slit (Hari Mirch)
• 12–15 curry leaves (Kadhi Patta)
• 2 tbsp sugar (Cheeni)
• ¼ tsp salt (Namak)
For Garnishing
• Fresh coriander leaves, chopped (Hara Dhaniya)
Dhokla Green Chutney
• 1 handful fresh coriander leaves (Hara Dhaniya)
• 2–3 green chilies (Hari Mirch)
• 1 small piece ginger (Adrak)
• A few curry leaves (Kadhi Patta)
• 1–2 tsp lemon juice (Nimbu Ka Ras)
• Salt to taste (Namak)
• 1 piece prepared dhokla (Khaman Dhokla)
