Ingredients:
All vegetable ingredients used to make the soup are bits and pieces of leftover vegetables. You can customize and replace some with whatever vegetables that you have on hand. You can add potato to make it thicker and filling.
1/4 cup Red Lentils - rinse thoroughly
1/4 small Bell Pepper
Onion
3 cloves Garlic
Ginger
Mix Seasoning and Spices: Salt, Black Pepper, garlic powder, paprika, dried oregano
1/2 tsp sugar
1 tsp Oil
1 cup Broth
Grated cheese for garnishing- optional
Instructions:
1. Sauté all vegetables in the heated pan with oil. Add seasoning, red lentil and broth.
2. Simmer for 10 minutes or until the lentils are soft
3. Purée the mixture using immersion blender or regular blender
4. Transfer back in the pan (if using regular blender)
5. Simmer for another 5 minutes. At this stage, you can adjust the seasoning and consistency. Add more broth if you like it lighter or simmer longer if you want it thick.
6. Serve while hot. Drizzle olive oil and sprinkle grated cheese on top (optional).
