Recipe -
For Pani -
- Take 1 cup of mint leaves.
- 1 cup coriander leaves
- 1 medium sized raw mango
- some green chillies
- a small piece of ginger
- black salt per taste
- 1 tsp roasted cumin seeds powder
- 1 fresh lemon juice
- 2 cups of water
.- churn every thing in the mixer and strain the water
- keep this water in the fridge
For Phulki
- take 1 cup of besan (gram flour)
- add 1/2 tsp Haldi powder
- 1 tsp chilli powder
- 1 tsp Dhania powder
- salt
- a pinch of Baking Soda
- Mix everything well and add water as required
- Make semi thick batter
- Cook in Appe pan on medium flame till you get golden color on both sides
- Let it cool down
Serving
- before serving, in the water, add phulki, onion slice, fresh coriander, boondi and chat masala (or my recipe of special masala - - this is the recipe for masala -
- dry roast 2 tbs whole coriander, 1 tbs cumin seeds, 10-12 peppercorns, 4-5 red whole dry red Kashmiri chillies.
- Turn off the heat & add a pinch of asafoetida, black salt & regular salt
- coarsely grind it.
