• 300 grams okra (भिंडी)
• 1 teaspoon salt (नमक)
• ½ teaspoon turmeric powder (हल्दी पाउडर)
• 4–5 drops lemon juice (नींबू का रस)
• 3–4 tablespoons oil (तेल)
Whole spices:
• ½ teaspoon cumin seeds (जीरा)
• ¼ teaspoon asafoetida (हींग)
• 1 bay leaf (तेजपत्ता)
• 1 small piece cinnamon (दालचीनी)
For masala base:
• 2 medium onions, finely chopped (प्याज)
• 7–8 garlic cloves (लहसुन)
• 2–3 pieces ginger (अदरक)
• 2–3 green chilies (हरी मिर्च)
• A pinch of salt (नमक)
Curd masala mix:
• ½ cup curd (दही)
• 1 teaspoon Kashmiri red chili powder (कश्मीरी लाल मिर्च पाउडर)
• 1 teaspoon red chili powder (लाल मिर्च पाउडर)
• ¼ teaspoon turmeric powder (हल्दी)
• 1 teaspoon cumin powder (जीरा पाउडर)
• 2 teaspoons coriander powder (धनिया पाउडर)
• 1 teaspoon gram flour (बेसन)
Tomato paste:
• 2 tomatoes (टमाटर)
• Fresh coriander leaves (हरा धनिया)
• ½ teaspoon salt (नमक)
Final seasoning:
• ½ teaspoon garam masala (गरम मसाला)
• 1 teaspoon roasted kasuri methi (कसूरी मेथी)
