When I crave a meatball sub, this is the one I think about most often. My own grind of dark chicken meat and salted pork, loaded with herbs, garlic, sourdough bread crumbs, snd parm. Ingredients: 1lb ground chicken thighs 1/4 lb ground salt pork 2 tbsp dry oregano 1 tbsp ground fennel seeds 1 tbsp dried thyme 1 tbsp dried rosemary 1 tbsp grated garlic 1 cup bread crumbs 4 tbsp grated Parmesan 1 tsp salt 2 tsp ground black pepper 1/2 cup olive oil, for frying (reserve 2tbsp in pan for sauce) 3 cups San Marzano crushed tomatoes Small chunk of Parmesan rind Basil stems 2 tbsp dried oregano Salt to taste 1 tbsp sugar (if you like it slightly sweet) Toasted Hoagie with oregano on top
