Why don’t you try AAMLA MIRCH KA ACHAR ?This delicious and tangy pickle is the perfect accompaniment to your favorite parathas, rotis, or even dal-chawal! 🥙✨ It's not just about taste—it's packed with health benefits, too! . 🌶️ Aamla Mirch Ka Achar Ingredients • Aamla (Indian Gooseberry): 250 gm • Fresh Green Chilies (Spicy or Mild): 150 gm  • Ginger: A small piece (cut into thin juliennes) • Oil (of your choice): 1/2 cup • Water (for steaming) Masala Ingredients (Dry Roasted and Ground): • Jeera (Cumin Seeds): 3 tbsp • Saunf (Fennel Seeds): 4 tbsp • Mustard Seeds: 3-4 tbsp • Methi Seeds (Fenugreek Seeds): 2 tbsp • Ajwain (Carom Seeds): 2 tbsp Masala Ingredients (Added after Grinding): • Kalonji (Nigella Seeds): 1 tbsp • Dhaniya Powder (Coriander Powder): 2-3 tsp • Haldi (Turmeric): 1 tsp • Red Mirchi Powder (e.g., Kashmiri Mirchi Powder): 2 tsp • Salt: As per taste • Hing (Asafoetida): As per taste Here’s the recipe: . 1️⃣ Start by steam cooking 250 gm of aamla for 20 minutes. Once they’re steamed, remove the seeds and chop them into pieces. Let them dry for a few hours under a fan. 🍃 . 2️⃣ Chop 150 gm of fresh green chilies (you can choose spicy or mild!). Also, julienne a small piece of ginger. . 3️⃣ Now, it’s time for the achar masala! Dry roast 3 tbsp of jeera, 4 tbsp of saunf, 3-4 tbsp of mustard seeds, 2 tbsp of methi seeds, and 2 tbsp of ajwain until fragrant. Grind coarsely and mix in 1 tbsp of kalonji, 2-3 tsp of dhaniya powder, 1 tsp of haldi, 2 tsp of red mirchi powder (I used Kashmiri!), salt, and hing. 🌶️✨ . 4️⃣ Heat 1/2 cup of oil until it's smokin’ hot and pour it over the masala mix. Combine everything and fold in steamed aamla, chilies, and ginger. . And voila! Your achar is ready! Enjoy it right away or let it sit a couple of hours for the flavors to deepen.
