- 2 green cardamoms
- 1 small piece of mace
- 1/2 black cardamom
- 1-inch cinnamon stick
- 8-10 black peppercorns
- 2 cloves
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon roasted cumin powder
- A pinch of turmeric powder
- Salt, to taste
- 1 teaspoon sugar
- 350 grams paneer, cut into pieces
- 1/2 teaspoon dried fenugreek leaves (kasuri methi), crushed
- Fresh coriander leaves, chopped (for garnish)
**Instructions:**
1. **Prepare the Cashew Milk:**
- Soak 1/4 cup cashew nuts in 1/2 cup lukewarm milk for about 15-20 minutes.
2. **Make the Spice Paste:**
- In a bowl, combine 2 tablespoons fresh cream and 2 tablespoons milk.
- Add 1 teaspoon red chili powder, 1 teaspoon coriander powder, 1 teaspoon roasted cumin powder, and a pinch of turmeric powder.
- Mix well to form a smooth paste.
3. **Cook the Vegetables:**
- Heat 2 tablespoons oil in a pan over medium heat.
- Add 1 teaspoon cumin seeds. Once they splutter, add 2 bay leaves, 2 green cardamoms, 1 small piece of mace, 1/2 black cardamom, 1-inch cinnamon stick, 8-10 black peppercorns, and 2 cloves. Sauté until aromatic.
- Add the roughly chopped onions, ginger, garlic, green chilies, and some coriander stalks. Sauté until the onions become soft.
