Recipe:
Veg Biryani
Preparation time: 40 minutes
Cooking time: 40 minutes
Serves: 3-4
Ingredients:
For the Rice:
3 cups basmati rice
2 bay leaves
2” cinnamon
2 black cardamoms
5-6 green cardamoms
4-5 cloves
1tsp pepper corns
4 tsp salt
2 green chilies
½ lemon
15 cups water
Vegetables:
½ cauliflower
2 carrots
12 beams
200g mushrooms
200g baby potatoes
1 cup peas
For the birista:
4 onions
Oil to fry
For the marinade:
1 cup hung curd
Crushed birista
1 tbsp red chili powder
1 tsp pepper powder
1 tsp mace cardamom powder
2 tbsp garam masala
Salt to taste
For cooking vegetables:
4 tbsp oil
1 bay leaf
1 tsp caraway seeds
2” cinnamon
2 black cardamoms
5-6 green cardamoms
4-5 cloves
1 dagad phool (stone flower)
Marinated vegetables
For Dum:
Few strand saffron (soaked in 2 tbsp warm milk)
¼ cup mint leaves
¼ cup coriander leaves
4 tbsp ghee
1 tbsp rose water
1 tbsp kewra water
¼ cup birista
1 cup rice water
Method:
Wash and soak the rice for 30 mins.
Cut vegetables into large chunks.
Fine slice the onions and fry in hot oil till golden and remove. This is the birista.
Mix vegetables with all ingredients for the marinade and marinate for 30 mins.
Heat oil in a pan and add the whole spices. Allow the spices to splutter and add the marinated vegetables. Cook till 50% cooked.
Boil 15 cups water in a large pot, add the spices, green chilies, lemon juice and simmer 1st layer rice.
2nd layer vegetables.
3rd layer rice.
Top with barista, mint leaves, coriander leaves, rosewater, kewra water, soaked saffron, ghee, 1 cup drained boiled rice water. Seal the lid with dough and cook on high heat for 5 mins and then on very low heat for 20 mins. Let it stand for 10 minutes and then open the seal. Serve with burani raita.
