*1. Make the carbonara cream*
In a bowl, whisk together the eggs, egg yolks, grated Parmesan, gochujang, and black pepper until smooth and well combined. Set aside, then in a large skillet over medium heat, cook the diced bacon until crispy and add the chopped kimchi to sauté briefly until slightly caramelized.
