Ingredients:
1 medium size ripe Banana
3 tablespoons Greek yogurt
1 Egg
1 tablespoon Flavorless Oil
2 tablespoons Milk
5 tablespoons Brown Sugar
1 cup All-purpose Flour
1/4 teaspoon Baking Soda
1 tablespoons Baking Powder
1/4 teaspoon Cinnamon Powder - optional
3/4 small Apple - peeled and diced
Toppings:
3 tablespoon Brown Sugar
1/4 teaspoon Cinnamon Powder
1/4 of small Apple
3 tablespoon Chopped Pecans - optional
Instructions:
1. Preheat the oven to 400F.
2. Mix the wet and dry ingredients in separate bowl them combine them together and mix until the dry ingredients are incorporated. Add the peeled and diced Apple and mix.
3. Divide portion in 6 and pour in the muffin pan lined with muffin liner.
4. In a bowl, mix the brown sugar, cinnamon powder, chopped pecans (if using)
5. Sprinkle topping on top of each muffin.
6. Bake at 400F for 5 minutes then at 350F for 15 - 18 minutes. Toothpick inserted in the center should come out clean of batter.
