We came up with three methods for making tiramisù ranging in difficulty from easy to hard, and this is our Goldilocks method: It looks and eats fancy, but it’s actually straightforward to make.
In this video, chef Nicholas Gavin demonstrates how we make a towering icebox cake by stabilizing the mascarpone cream with gelatin and xanthan gum. The stabilized cream sets up firm enough to slice cleanly; it won’t “weep”; and it still eats like a cloud.
