Juicy lamb koftas, fluffy pearl couscous cooked in chicken stock with a hit of turmeric & ginger bone broth, fresh veg, and a dollop of tzatziki 🥒🍋
Quick to make, full of flavour, and perfect for a weeknight dinner. The koftas also freeze well so go ahead and do yourself a favour, make a double batch!
Ingredients
Koftas
•500g lamb mince
• 1 small onion, grated
• 2 garlic cloves, minced
• 1 tsp ground cumin
• 1 tsp ground coriander
• tsp smoked paprika
• ½ tsp cinnamon
• 1 tbsp chopped parsley or mint
• Salt & pepper
Couscous:
• 1 cup pearl couscous
• 1 ¾ cups chicken stock
• 1 tsp Best of the Bone ginger & turmeric bone broth paste (optional but WORTHH IT / discount code off their website ‘TIAHN15’)
• ½ red capsicum, diced
• ½ small red onion, diced
• ½ cucumber, diced
• ½ cup cherry tomatoes, halved
• ¼ cup chopped parsley
To Serve:
Store-bought or homemade tzatziki, lemon wedges, feta and olives if you’d like!
Method
Koftas – Mix all kofta ingredients, shape into small logs or balls, and pan-fry or grill in olive oil for 8–10 mins until cooked through.
Couscous – Toast couscous in olive oil 1–2 mins, add chicken stock and bone broth paste. Bring to a boil, cover, and cook 10 mins until liquid is absorbed. Fluff, then stir through capsicum, onion, cucumber, tomatoes, and parsley. Squeeze a wee bit of lemon over the top also.
Assemble – Add tzatziki on the base of a plate then layer on couscous, top with koftas, and garnish with lemon, feta or olives.
