*Cozy Winter Phyllo Dough Pastry*
After the craziness of the holidays, it's important to keep things simple in the kitchen. But keeping things simple doesn't mean you need to sacrifice on flavor. This comforting winter pastry is simple to make, but packs a big punch in the flavor department! Layer a few sheets of flaky phyllo dough, fill them with red cabbage, cranberries, and goat cheese, and pop the whole thing in the oven for the perfect warming meal. All of the delicious winter flavors you love, without the hassle!
⏱️ Cook time: 1 hour
🔥 350°F
_Ingredients:_
- 1 head of red cabbage
- 2 tbsp vinegar
- salt & pepper to taste
- 2 cups roasted chestnuts
- 1½ cups fresh cranberries
- 11 oz goat cheese
- ¾ stick butter, melted
*1. Prepare the filling*
Boil a pot of salted water and add in the vinegar. Thinly slice the red cabbage and boil it in the pot for about 10 minutes, then thoroughly drain it and let it cool. Use a fork to crush the roasted chestnuts, then mix them with the red cabbage and cranberries and season the mixture with salt and pepper.
*2. Assemble the winter pastry*
Preheat the oven to 350°F and melt the butter. Brush a sheet of phyllo dough with melted butter, then layer another 1-2 sheets on top, making sure to coat each layer with butter before layering. Spoon the filling into the center of the phyllo dough, crumble to goat cheese on top, then roll everything into a log.
*3. Bake and enjoy!*
Place the winter pastry on a baking tray lined with baking paper and brush melted butter over the outer layer of the phyllo dough. Transfer the baking tray to the oven and bake at 350°F for 50 minutes.
