Thukpa is a hot, Tibetan-style noodle soup with roots in Tibet that is now popular in Nepal, India, prepared in both vegetarian and non-vegetarian versions.
I have shared with you the recipe of a Veg Thukpa with you today.
Veg Thukpa is made with a flavourful veg broth, noodles, and vegetables.
It's known for being a comforting and nutritious dish, often garnished with fresh herbs and spices.
Along with the Veg Thukpa recipe, I have also shared with you how to make fresh noodles, a chili oil and the basic stock as well.
If you do not want to make fresh noodles for the Veg Thukpa, you can use ready Hakka Noodles as well.
Veg Thukpa
Preparation time: 30 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
For the Noodle Dough:
1 cup Flour
¼ tsp salt
1 tsp oil
Water as required
For the broth:
2 cup vegetable peels & leaves
1 litre water
2 bay leaves
1 tsp pepper corns
For the Thukpa:
2 tbsp Oil
1 tbsp minced ginger
1 tbsp minced garlic
1 tsp minced green chilies
2 onions, sliced
¼ cabbage, shredded
1 carrot, julienned
6-8 beans, sliced
6-8 mushrooms, sliced
¼ tsp turmeric powder
½ tsp red chili powder
½ tsp cumin powder
1 tsp pepper powder
Salt to taste
1 tbsp soya sauce
1 tbsp white vinegar
¼ cup chopped spring onion
For the Chili oil:
½ cup red chili flakes
½ cup toasted white sesame seeds
¼ cup minced garlic
1 cup oil
1 tbsp soya sauce
Method:
For the noodles:
Add salt, oil to the flour and knead to a stiff dough with very little water.
Roll out the dough, fold and roll the dough again till the dough is smooth. Divide dough into balls and roll into a thin roti. Cut into noodles. Rest the noodles for 5 minutes.
Meanwhile boil 1 litre water. Add 1 tsp salt, 1 tbsp oil to the water and cook the noodles for 1 minute.
Refresh the noodles in cold water and drain. Lightly oil the noodles and set aside.
For the Broth:
Place the vegetable peels with the bay leaves, pepper corns and coriander stems with 1 Litre water in a pan. simmer for 20 minutes. Strain.
For the chilli oil:
Place all ingredients except soya sauce in a pan and simmer over low heat for 4-5 minutes. Add soya sauce. Cool and store.
For the Thukpa Soup:
Set a wok on medium heat, let the wok heat nicely add oil and heat it well.
Add ginger, garlic and green chillies, cook them on high flame for a few minutes.
Add the sliced onions and stir and cook for a minute on medium high flame until the onions become translucent.
Add the tomatoes and cook on high flame for a minute.
Add hot stock to the wok and bring it to a boil, once it starts to boil add all the vegetables, powdered spices, soy sauce, salt to taste and black pepper powder. Stir well and cook for 2-3 minutes. Do not overcook them.
Serve hot with cooked noodles and chili oil, spring onions.
