📌 RECIPE AND INGREDIENTS:
Ingredients:
2 zucchini
1 red sweet pepper
1 red onion
1 broccoli
3 eggs
80 g Greek yogurt
2 cloves garlic
Salt
Italian herbs
Red paprika
Olive oil
Cheese
Parsley
Dill
Side dish:
1 cup quinoa
400 ml hot water
Sauce:
1 tsp Greek yogurt
1 tsp mayonnaise
2 pickled cucumbers
2 cloves garlic
Dill
Preparation:
Slice the zucchini, sweet pepper, onion, and broccoli. Place the vegetables on a baking tray, add olive oil, and bake for 25 minutes at 180°C.
In a bowl mix eggs, Greek yogurt, salt, paprika, Italian herbs, and grated garlic.
Transfer the roasted vegetables into a baking dish, add chopped parsley and dill, pour in the egg mixture, and mix well. Sprinkle cheese on top.
Bake for 25–30 minutes at 180°C.
Pour hot water over the quinoa, cover, and let it sit for 10–15 minutes.
For the sauce mix Greek yogurt, mayonnaise, finely chopped pickled cucumbers, garlic, and dill.
