Now add yeast and mix well. Cover and set aside for 10-15 minutes for yeast activation. - ⁠Take maida and add the other ingredients and mix well. Now add yeast mixture and water. - ⁠Knead this dough for 15 minutes if kneading manually or for 5-7 minutes using a hand beater with dough hook attachment or a stand mixer. - ⁠Cover and rest the dough for 1 hour or so until the dough doubles in size. - ⁠After proofing, divide the dough into 2-3 portions and roll into a long sheet as shown in the video. Use flour if dough stick to your hand or the counter. - ⁠Cut into strips and shape as shown in the video. - ⁠Now steam these for 15 minutes at medium to high flame. - ⁠For cheese sauce, heat butter and add flour. Mix well and cook for 1-2 minutes or until the raw smell is gone. Now add milk and cheese to a pan and gently stir keeping the heat low. Add a pinch of salt if required.
