Breading:
1 cup cornstarch
1 cup all-purpose flour
1 tsp black pepper
1 tsp paprika
Pinch of cayenne
1 tbsp seasoning granules
Dipping Sauce (sawsawan):
1 cup suka
5 pcs calamansi
1 tbsp patis
1/4 cup sugar
2 cloves garlic (pounded)
1 tsp salt
Red chili
Onion, chopped
Procedure:
Hiwain ang pork liver ng manipis. Rub generously with salt, then wash 3–4 times until clear ang tubig.
Sa malinis na atay, idagdag ang garlic, brown sugar, salt, cayenne, black pepper, soy sauce, liquid seasoning, oyster sauce, baking soda, at egg. Mix well and marinate for 10–15 minutes only.
Pagsamahin ang cornstarch, flour, black pepper, paprika, cayenne, at seasoning granules. I-coat ang bawat piraso ng liver.
Iprito sa mainit na mantika hanggang golden brown. Patuluin sa cooling rack o tissue-lined bowl.
Para sa sawsawan, paghaluin ang suka, calamansi, patis, sugar, garlic, at asin. Haluin hanggang matunaw ang sugar. Salain para maalis ang bawang. Lagyan ng chili at onion. Portion into ice candy plastic.
