Instant White Rawa Dhokla
Prep Time: 5-10 Minutes (10-15 Minutes of resting)

Ingredients:
Batter
COARSE RAWA | जड़ा राव 1 CUP
SOUR CURD | खट्टा दही 1 CUP
WATER | पानी 1/2 CUP + 1 to 2 TBSP
GINGER & GREEN CHILLI PASTE | अदरक और हरी मिर्च की पेस्ट 1 TSP
SUGAR | शक्कर 1/2 TSP
SALT | नमक TO TASTE
GROUNDNUT OIL | भुनी हुई मूंगफली 1 TSP
ENO | ईनो 1 TSP
Topping
FRESHLY CRACKED BLACK PEPPER | ताज़ी काली मिर्च TO TASTE
RED CHILLI POWDER | लाल मिर्च पाउडर A PINCH
Method:
Start by making the batter. Take a large bowl and add coarse rawa and sour curd in equal quantities. Use coarse rawa here, the fine variety won't give you the same texture. Try to use sour curd specifically, as it is what replicates the fermented flavour in the batter.
Add water, ginger and green chilli paste, sugar, and salt. Whisk everything together until you get a smooth, flowing batter. Cover and let it rest for 10–15 minutes.
While the batter rests, you can make the chutney.
Now get your steamer ready. Fill it with water, cover it, and set it on the gas to heat up. Always pre-heat the steamer before putting the dhokla in, this is what helps it rise properly and gives it a better texture.
Now check the batter. You'll notice it has thickened as it rested. Add water, a little at a time, and mix until you get a smooth pouring consistency again. About 1–2 tbsp should be enough.
Grease the steamer tray well with groundnut oil, cover both the base and the sides.
Now add groundnut oil and eno to the batter and mix immediately and thoroughly. You will see the batter begin to aerate and rise slightly. Do not let it sit after this, pour it straight into the greased tray and spread it out evenly. Keep the thickness moderate; you don't want it too thick.
Sprinkle freshly cracked black pepper and red chilli powder evenly over the top.
Place the tray into the pre-heated steamer and steam for 12–15 minutes. To check, insert a knife , if it comes out clean, the dhokla is done.
Take the tray out and let the dhokla cool slightly before cutting. This helps it set and makes it easier to slice cleanly.
Add lemon juice to the chutney and mix just before serving.
Your soft, spongy Instant White Rawa Dhokla is ready. Serve it with the chutney alongside.
Green Chutney
FRESH CORIANDER | हरा धनिया 1 CUP (PACKED)
GREEN CHILLI | हरी मिर्च 4–5 NOS.
GINGER | अदरक 1 INCH
ROASTED PEANUTS | भुनी हुई मूंगफली 1 TBSP
CUMIN SEEDS | जीरा 1/4 TSP
CURD | दही 3 TBSP
SUGAR | शक्कर 1 TBSP
LEMON JUICE | नींबू का रस OF 1/2 LEMON
ICE CUBE | बर्फ 1 NO.
SALT | नमक TO TASTE
Method:
In a mixer jar, add fresh coriander, green chillies, ginger, roasted peanuts, cumin seeds, curd, sugar, ice cube, and salt.
Grind into a smooth, fine chutney.
Taste and adjust. Add lemon juice just before serving.
