This traditional, perfectly made Vegetable Upma is fluffy, flavourful and loaded
with colourful veggies — the ultimate healthy breakfast that comes together
in just 20 minutes! The ghee-roasted sooji and curry leaves make all the difference! 🌿
📌 INGREDIENTS:
- 1 cup Sooji (semolina)
- 1 tsp Ghee (for roasting sooji)
- 2 tbsp Oil
- 2 tbsp Peanuts (singdana)
- 4–5 Cashews
- 1 tsp Mustard seeds (rai)
- ½ tsp Cumin seeds (jeera)
- ½ tsp Urad dal
- 1 tsp Chana dal (soaked before use!)
- 1 tsp Ginger (finely chopped)
- 2 Green chillies (finely chopped)
- 10–12 Curry leaves
- 2 tbsp Fresh peas (matar)
- 2 tbsp Carrot (finely chopped)
- 1 Onion (finely chopped)
- 1½ tsp Salt (adjust to taste)
- Water (as needed)
- ½ tsp Ghee (finishing)
- Fresh coriander & juice of ½ lemon to garnish
🍽️ METHOD:
1. Dry roast sooji on medium flame for 5–7 mins, stirring continuously — add 1 tsp ghee after 2 mins
2. Roast until fluffy & fragrant but NO colour change — transfer to a bowl
3. In the same pan, heat oil — fry peanuts 2–3 mins until skin separates, remove
4. Fry cashews 10–15 secs until golden, remove
5. Add rai, jeera, urad dal & soaked chana dal — sauté 1 min
6. Add ginger + green chillies — cook 1 min
7. Add curry leaves — cook 1 min (essential for that authentic taste!)
8. Add peas + carrot — cook 3–4 mins
9. Add onion — cook 2 mins
10. Add salt — cook 2 more mins until all veggies are soft
11. Add water, mix well, cover & cook 5 mins
12. Add roasted sooji gradually (NOT all at once!) on low flame, stirring gently
13. Fold in fried cashews & peanuts
14. Once mixture leaves the sides of the pan — it's ready!
15. Add ½ tsp ghee, garnish with fresh coriander & lemon juice — serve piping hot! 🌿🍋
💡 PRO TIPS:
- Soak chana dal before starting — it should be ready by the time you need it
- Never add all sooji at once — add gradually to prevent lumps
- Curry leaves are NON-NEGOTIABLE for the authentic upma flavour!
- Roast sooji on medium only — high heat changes its colour
