Ingredients 🥩
Lamb:
• 8 lamb chops (about 450g), mid-loin or forequarter work great
• 1 tbsp olive oil
• 2 garlic cloves, sliced
• Zest of 1 lemon (pared rind)
• Fresh rosemary sprigs
• Salt & pepper
Butter Bean Stew:
• 1 tbsp vegetable oil
• ½ red onion, finely chopped
• 2 garlic cloves, chopped
• 1 tbsp chopped sage
• 1 tsp dried chilli flakes
• 150ml chicken stock
• 1 × 400g can whole plum tomatoes
• 1 tbsp tomato paste
• 2 × 400g cans butter beans, rinsed
• 50g feta cheese
• 1 tbsp chopped parsley
Method 🧑🍳
Marinate the lamb: Toss chops with olive oil, garlic, lemon rind, and rosemary. Set aside while prepping the stew (even 20 mins works wonders).
Make the stew: Sauté onion, garlic, sage, and chilli. Add stock, tomatoes, tomato paste, and beans. Simmer 15 mins until thick and rich.
Sear the lamb: Cook chops over medium-high heat for 5–6 mins, turning often. Rest under foil for 10 mins.
Serve: Spoon stew into bowls, top with lamb, crumble feta, and scatter parsley.
