こんにちは、料理研究家のゆかりです。 今回は『ナスときゅうりの浅漬け』の作り方をご紹介します。夏野菜を切って漬けるだけで簡単に作れる、さっぱり美味しい浅漬けレシピです!ナスときゅうりの食感がよく、暑い日にも食べやすい常備菜に仕上がります。ご飯のおかずやお酒のおつまみにもおすすめなので、ぜひ作ってみてください。 Hello, I’m Yukari, a culinary researcher. Today, I’ll show you how to make "Lightly Pickled Eggplant and Cucumber." It’s a refreshing and delicious recipe that’s easy to prepare—simply chop the summer vegetables and let them pickle! The combination of textures makes for a great staple side dish that’s perfect even on hot days. It goes wonderfully with rice or as a snack with drinks, so please give it a try. ----------------------------------------------------------------------------------------- 【材料】(2人分) ・ナス … 1本 ・きゅうり … 2本 ・ミョウガ … 1本 ・生姜 … 10g ・大葉 … 5枚 ・塩昆布 … 5g ・水 … 300ml ・白だし … 大さじ1.5 ・酢 … 大さじ1 ・みりん … 小さじ2 ・はちみつ … 小さじ1 ・塩 … 小さじ1 【作り方】 1.きゅうりを縦半分に切り、斜めの薄切りにしボウルに入れる。 2.ナスのヘタを切り落とし縦半分に切り、斜めの薄切りにしボウルに入れる。 3.塩を加え塩揉みし、重石をおき15分おく。 4.ミョウガのヘタを取り、縦半分に切り斜めの薄切りにし、水に1分ほど浸す。 5.生姜と大葉を千切りにする。 6.ナスときゅうりの水分をしっかり絞り容器に入れ、ミョウガと生姜を加える。 7.小鍋に水・みりん・白だしを加え煮立たせ、火を止め酢とはちみつを加える。 8.⑥に塩昆布を加え⑦をまわしかけて混ぜ、冷蔵庫で30分漬け込み大葉を加えて混ぜ完成。 【ingredients】 ・1 … Eggplant ・2 … Cucumbers ・1 … Myoga ginger ・10g … Ginger ・5 … Shiso leaves ・5g … Salted kelp ・300ml … Water ・1.5 tbsp … Shirodashi ・1 tbsp … Vinegar ・2 tsp … Mirin ・1 tsp … Honey ・1 tsp … Salt 【Instructions】 1. Cut the cucumber in half lengthwise, slice it thinly on the diagonal, and place it in a bowl. 2. Trim the stems off the eggplants, cut them in half lengthwise, slice them thinly on the diagonal, and place them in a bowl. 3. Add salt to the vegetables, massage it in, place a weight on top, and let sit for 15 minutes. 4. Trim the bases of the myoga (Japanese ginger), cut them in half lengthwise, slice thinly on the diagonal, and soak in water for about 1 minute. 5. Julienne the ginger and shiso leaves. 6. Squeeze the excess moisture thoroughly from the eggplant and cucumber, place them in a container, and add the myoga and ginger. 7. Combine water, mirin, and *shiro-dashi* (white dashi stock) in a small saucepan and bring to a boil; turn off the heat, then stir in the vinegar and honey. 8.
