Today, I’ll show you how to make "Pork-Wrapped Eggplant and Shiso Leaves." It’s a simple dish—just wrap eggplant and shiso leaves in pork and pan-fry them—that goes perfectly with rice! The eggplant turns out juicy, while the aroma of the shiso leaves keeps the flavor light and refreshing. It’s also a great choice for bento boxes, so please give it a try. ----------------------------------------------------------------------------------------- ■材料(14個分) ◯肉巻き ・豚バラ薄切り肉 14枚 ・ナス 2本 ・大葉 7枚 ・ごま油 小さじ1 ・片栗粉 適量 ・塩 適量 ・胡椒 適量 ◯たれ ・醤油 大さじ1 ・みりん 小さじ2 ・酒 小さじ2 ・砂糖 小さじ2 ・酢 小さじ1/2 ・おろしニンニク 小さじ1/2 ・おろし生姜 小さじ1/2 ■作り方 1.ナスのヘタを切り落とし薄切りにし、塩をまぶし5分おく。 2.大葉を洗い水分を拭き取り茎を切り落とし半分に切る。 3.醤油・みりん・酒・酢・砂糖・生姜・ニンニクを混ぜる。 4.ナスの水分を拭き取る。 5.豚肉を広げ塩胡椒をし、大葉とナスをおきくるくる巻き、片栗粉をまぶす。 6.フライパンにごま油をひき、巻き終わりから焼く。 7.全体に焼き色が付いたら蓋をして弱火で2分蒸し焼きする。 8.余分な油を拭き取り、③を加えてからめ完成。 ■ingredients ・14 slices pork belly ・2 eggplants ・7 shiso leaves ・1 tsp sesame oil ・Potato starch ・Salt ・Pepper ・1 tbsp Soy sauce ・2 tsp Mirin ・2 tsp Sake ・2 tsp Sugar ・1/2 tsp Vinegar ・1/2 tsp Grated garlic ・1/2 tsp Grated ginger ■Instructions 1. Trim the stems off the eggplants, slice them thinly, sprinkle with salt, and let sit for 5 minutes. 2. Wash the shiso leaves, pat them dry, trim off the stems, and cut them in half. 3. Mix together the soy sauce, mirin, sake, vinegar, sugar, ginger, and garlic. 4. Pat the eggplant slices dry. 5. Lay out the pork slices and season with salt and pepper; place the shiso leaves and eggplant on top, roll them up tightly, and coat with potato starch. 6. Heat sesame oil in a frying pan and cook the rolls, starting with the seam side down. 7. Once browned all over, cover the pan and steam-cook over low heat for 2 minutes. 8.
