Slice the potatoes, cover with water, bring to a boil, add salt, and cook for 5–7 minutes until slightly tender. Slice the onion into petals and sauté in olive oil. Add the sliced mushrooms, salt, black pepper, and Italian seasoning. Cook for about 7 minutes. To make the sauce, melt the butter, stir in the flour, and cook briefly. Gradually pour in the milk while whisking constantly. Add salt, ground nutmeg, and grated Parmesan cheese. Cook for another minute until the sauce thickens. Line a baking dish with parchment paper and lightly grease it with olive oil. Spread a little sauce on the bottom, then arrange a layer of potatoes followed by more sauce. Squeeze the excess moisture from the zucchini and spread it over the potatoes. Add another layer of potatoes, the sautéed mushrooms, more sauce, the remaining potatoes, another layer of zucchini, and finish with the remaining sauce.
