Pan:
âą 16Ă8Ă4.5 cm (or similar) lined with parchment
âą 180°C (360°F) â 40 minutes
Instructions
1. Peel and finely grate the carrot (1â
cups).
2. Whisk eggs + stevia + yogurt + coconut oil.
3. Add oat flour + coconut/almond flour + baking powder + cinnamon + vanilla.
4. Fold in grated carrot.
5. Pour batter into the parchment-lined pan.
6. Bake at 180°C for 40 minutes (toothpick test).
7. Cream:
o Mix cottage cheese + yogurt + vanilla + stevia until smooth.
8. Serve:
o Let the cake cool.
