An airy berry oat pie with frozen black currants (or cherries/strawberries) â completely sugar-free and flour-free! Tender texture, bright berry flavor, and light sweetness from stevia.
Recipe for cooking and ingredients:
For the pie:
âą 3 eggs
âą 1œ tbsp stevia (or your favorite sweetener to taste)
âą 5 tbsp coconut & vegetable oil blend (70 g / 2.5 oz)
âą 5 tbsp yogurt (70 g / 2.5 oz)
âą Pinch of salt
âą 1œ cups rolled oats (160 g / 5.6 oz) â grind into flour
âą 1 tsp baking powder
âą 1 cup frozen black currants (200 g / 7 oz) â or cherries/strawberries
Pan:
âą 18 cm diameter lined with parchment
âą 180°C (360°F) â 50 minutes
Instructions
1. Whisk eggs + stevia.
2. Add oil blend + yogurt + pinch of salt, mix.
3. Grind oats into flour, add baking powder.
4. Combine dry and wet mixtures.
5. Pour half the batter into the pan.
6. Top with half the frozen berries.
7. Pour remaining batter, decorate with remaining berries.
8. Bake at 180°C for 50 minutes.
9. Let the pie cool.
10. Serve:
