A festive apple cake made with oat flour, cinnamon, vanilla, and dried fruits â zero sugar, zero flour, zero glucose spikes! Tender texture, Christmas aroma, and natural apple sweetness.
Recipe for cooking and ingredients:
For the cake:
âą 2 small apples (peeled, finely diced)
âą 2 eggs
âą 3 tbsp milk
âą 2 tbsp yogurt
âą 1 tbsp stevia (or any 1:1 sugar substitute)

âą 60 g (10 tbsp / œ cup / 2 oz) rolled oats â grind into flour

âą 40 g (ÂŒ cup / 1.4 oz) dried cranberries (soak 15 min)

âą Walnuts (for topping)

For the oolong tea:
âą 2 tbsp oolong tea
âą 1 tsp dried orange peel
âą 4 small slices fresh ginger
âą Boiling water (steep 4 min)
Baking:
âą 16Ă11 cm (6Ă4 in) pan â greased with olive oil + parchment on bottom
âą 180°C (360°F) â 35 minutes
Instructions
1. Apple base:
o Peel and finely dice 2 small apples.
2. Wet mix:
o Whisk 2 eggs + 3 tbsp milk + 2 tbsp yogurt + 1 tbsp stevia.
o Add vanilla + œ tsp cinnamon.
3. Dry mix:
o Grind 60 g oats into flour.
o Extinguish 1 tsp baking soda with 1 tbsp vinegar.
o Combine oat flour + extinguished soda with wet mix.
4. Assembly:
o Pour batter over apples and mix.
o Add drained dried fruits (reserve some cranberries).
o Transfer to greased pan with parchment.
o Decorate with walnuts and reserved cranberries.
5. Bake:
o 180°C (360°F) â 35 minutes (toothpick clean).
6. Oolong tea:
o Add oolong + orange peel + ginger to teapot.
o Pour boiling water, steep 4 minutes.
7. Serve:
