Dry ingredients:

âą Dried ginger â 1/2 tsp
âą Cinnamon â 1 tsp
âą Nutmeg â 1/4 tsp
âą Baking powder â 2 tsp
âą Salt â a pinch
Nuts:
âą Walnuts â 1/3 cup (1 oz / 30 g)
âą Almonds â 1/3 cup (1 oz / 30 g)
Wet ingredients:
âą Eggs â 2
âą Agave syrup or honey â 2/3 cup (2.4 fl oz / 70 ml)
âą Vegetable oil â 2/3 cup (2.4 fl oz / 70 ml)
Add-ins:
âą Carrots â 2 medium (5 oz / 150 g)
âą Greek yogurt â 2 tbsp
âą Zest of 1/2 lemon

âą Greek yogurt â 2 tbsp
âą Lemon juice â 1 tbsp
âą Agave syrup or honey â 1 tbsp

Blend the oats into a fine flour.
Add dried ginger, cinnamon, nutmeg, baking powder, and salt. Mix well.
Lightly toast the walnuts and almonds, chop them, and add to the dry mixture.
In a separate bowl, beat the eggs. Add agave syrup (or honey) and vegetable oil, then mix again.
Combine wet and dry ingredients.
Grate the carrots and add them to the batter along with Greek yogurt and lemon zest. Mix until combined.
Transfer the batter to a parchment-lined pan and smooth the top.
Bake at 350°F (180°C) for 50â55 minutes.
Let the cake cool completely.
