Today I’m making my absolute favorite daily cake — an oat cake with yogurt, apple, and banana. No sugar, no flour, but loaded with flavor and nutrition!
It’s moist, aromatic, and incredibly satisfying. I eat this cake almost every day and highly recommend it to anyone who wants to eat tasty and healthy food.
Recipe for cooking and ingredients:
• Rolled oats — 1 cup (3.5 oz / 100 g)
• Eggs — 2
• Greek yogurt — ¼ cup (1.8 oz / 50 g)
• Milk — ½ cup (3.4 fl oz / 100 ml)
• Banana — 1
• Apple — 1
• Raisins — 1½ tbsp (0.7 oz / 20 g)
• Dried cranberries — 1½ tbsp (0.7 oz / 20 g)
• Walnuts — ½ cup (1.8 oz / 50 g)
• Ground cinnamon — ½ tsp
• Zest of 1 orange
• Baking powder — 2 tsp
• Butter — 1½ tbsp (20 g)
For topping:
• Agave syrup or honey — for brushing
• Almond flakes — for decoration
Instructions:
1. In a bowl, whisk 2 eggs. Add ¼ cup Greek yogurt (50 g) and ½ cup milk (100 ml). Mix well.
2. Add 1 cup rolled oats (100 g) and stir.
3. Mash 1 banana with a fork and add it to the mixture.
4. Peel and core 1 apple, then cut it into small pieces.
5. Soak 1½ tbsp raisins and 1½ tbsp dried cranberries in water for 15 minutes, then drain.
6. Add the apple pieces, soaked dried fruits, ½ tsp cinnamon, and zest of 1 orange to the batter. Mix well.
7. Melt 1½ tbsp butter (20 g) in a pan and sauté the apples and dried fruits for 5 minutes. Add this mixture to the oat batter.
8. Chop ½ cup walnuts (50 g) and stir them in.
9. Add 2 tsp baking powder and mix thoroughly.
10. Grease a silicone mold with oil and pour in the batter.
11. Bake in a preheated oven at 350°F (180°C) for 45–50 minutes.
12. Let the cake cool completely, then brush the top with agave syrup or honey and decorate with almond flakes.
Serving & Storage Perfect for breakfast or a healthy snack. Store in the refrigerator for up to 5 days.
