Hi everyone!
A super-tender cottage cheese & coconut-flour pie with apple slices â 100 % sugar-free and wheat-free! Light and airy cottage-cheese base, beautiful apple âroseâ on top brushed with coconut oil.
Recipe for cooking and ingredients:
For the pie:
âą 200 g (1œ cups / 7 oz) soft cottage cheese (5â9 % fat)
âą 2 eggs
âą 1 tbsp stevia (or any 1:1 sugar substitute)
âą 4â4œ tbsp (â 40â45 g) coconut flour
âą 1 tsp baking powder
âą 1 medium apple â core removed, sliced into thin wedges
âą A little coconut or olive oil (for greasing)
For the tea:
âą 1 slice of lemon
âą 1 cinnamon stick
âą 2 tbsp green or vitamin tea
âą Boiling water (steep 4â6 minutes)
Pan:
âą 16Ă11 cm (6Ă4 in) â greased + parchment on the bottom
âą 180°C (360°F) â 25 minutes
Instructions
1. Whisk cottage cheese + 2 eggs + 1 tbsp stevia.
2. Add 4â4œ tbsp coconut flour + 1 tsp baking powder and mix well.
3. Grease the pan with oil and line the bottom with parchment.
4. Spread the batter evenly.
5. Arrange thin apple wedges beautifully on top.
6. Lightly brush the apple slices with coconut oil.
7. Bake at 180°C (360°F) for 25 minutes until lightly golden.
8. Tea:
o Add lemon slice + cinnamon stick + 2 tbsp green tea to a teapot.
o Pour boiling water and steep 4â6 minutes.
9. Serve:
