Hey everyone! đ„° Today we're making an incredibly healthy oat bread perfect for diabetics and anyone watching their blood sugar or weight: no sugar, no wheat flour, no yeast!
Recipe for cooking and ingredients:
âą Greek yogurt (plain, unsweetened) â œ cup (130 g)
âą Eggs â 2
âą Rolled oats (old-fashioned) â 1œ cups (160 g)
âą Flax seeds â ÂŒ cup (30 g)
âą Pumpkin seeds â 2 tablespoons (â20â25 g)
âą Sesame seeds â 2 tablespoons (â20 g)
âą Water â 1 cup + â
cup (130 ml)
âą Olive oil â 2 tablespoons (â30 ml)
âą Baking powder â 1œ teaspoons (â6â7 g)
âą Salt (sea or Himalayan) â 1 teaspoon (â5â6 g)
Instructions:
1. In a bowl, mix œ cup Greek yogurt (130 g) + 2 eggs. Whisk well until smooth.
2. Grind 1œ cups oats (160 g) in a coffee grinder or blender until it becomes oat flour.
3. Grind Œ cup flax seeds (30 g) the same way.
4. Lightly toast 2 tbsp pumpkin seeds and 2 tbsp sesame seeds in a dry pan for extra flavor, then grind them (or leave whole if you like crunch).
5. To the dry ingredients (oat flour + ground flax + pumpkin/sesame seeds), add 1œ tsp baking powder and 1 tsp salt. Mix and make a well in the center.
6. Pour into the well: 130 ml water, 2 tbsp olive oil, and the yogurt-egg mixture.
7. Gradually stir everything together until you get a thick, even batter (not too runny!).
8. Line your loaf pan with parchment paper (or lightly grease it). Pour in the batter and smooth the top.
9. Bake in a preheated oven at 350°F (180°C) for 45â50 minutes. Test with a toothpick â it should come out clean.
10. Let it cool completely in the pan (ideally 30â60 minutes) for the best texture and easy slicing!
Serving & Storage Slice and enjoy plain, with avocado, cream cheese, eggs, or as a base for sandwiches â a perfect low-GI alternative to regular bread! Store in an airtight container or bag in the fridge for up to 5â7 days (oats and seeds keep it fresh longer). Freeze slices individually â thaw at room temp or toast straight from frozen.
