Hello everyone!
A luxurious sweet "sausage" made from 100% dried fruits and nutsâwithout a drop of added sugar and no baking! Dates, figs, dried apricots, cranberries, raisins + 5 kinds of toasted nuts and seeds + orange zest and ginger.
Recipe for cooking and ingredients:
âą 80 g (œ cup / 2.8 oz) pitted dates
âą 25 g (â
cup / 0.9 oz) raisins
âą 25 g (â
cup / 0.9 oz) dried cranberries
âą 40 g (ÂŒ cup / 1.4 oz) dried apricots
âą 25 g (â
cup / 0.9 oz) dried figs
âą 25 g (â
cup / 0.9 oz) pumpkin seeds (toasted)
âą 25 g (â
cup / 0.9 oz) walnuts (toasted)
âą 15 g (â
cup / 0.5 oz) almonds (toasted)
âą 20 g (â 2 heaped tbsp / 0.7 oz) hazelnuts (toasted)
âą 25 g (â
cup / 0.9 oz) sesame seeds (toasted â reserve half for coating)
âą 15 g (â
cup / 0.5 oz) rolled oats (toasted)
âą Zest of 1 orange
âą 1 tsp ground dried ginger
âą Pinch of salt
Instructions
1. Soak all dried fruits in cold water for 15 minutes.
2. Lightly toast all nuts, seeds, and oats on a dry skillet until fragrant.
3. Drain and pat dry the fruits, remove pits from dates, chop everything into small pieces.
4. Roughly chop the toasted nuts and seeds (reserve half the sesame for coating).
5. In a large bowl, combine chopped dried fruits + toasted nuts & seeds + oats + orange zest + ginger + pinch of salt.
6. Knead thoroughly with your hands â the mixture should become sticky and hold together.
7. Form a tight log about 5â6 cm in diameter.
8. Spread reserved sesame seeds on cling film and roll the log in them.
9. Wrap tightly and freeze for 2â3 hours.
10. Slice with a sharp knife into 1 cm thick rounds.
