Today we’re making super healthy and delicious nut cookies that take only 5 minutes to prepare! No sugar, no flour, and no butter — just wholesome ingredients.
Crunchy on the outside, slightly chewy inside, packed with nuts, seeds, and dried fruits. Perfect for a daily snack or a guilt-free dessert!
Recipe for cooking and ingredients:
• Peanuts — ⅓ cup (1.4 oz / 40 g)
• Almonds — ¼ cup (0.7 oz / 20 g)
• Walnuts — ¼ cup (0.7 oz / 20 g)
• Sunflower seeds — 2½ tbsp (0.7 oz / 20 g)
• Pumpkin seeds — 2½ tbsp (0.7 oz / 20 g)
• Rolled oats — ⅓ cup (1.1 oz / 30 g)
• Coconut flakes — 15 g (≈0.5 oz)
• Flax seeds — 1½ tbsp (0.35 oz / 10 g)
• Dried apricots — ⅓ cup (1.4 oz / 40 g)
• Dried cranberries — ¼ cup (0.7 oz / 20 g)
• Raisins — ¼ cup (0.7 oz / 20 g)
• Egg white — 1
• Agave syrup — 3 tbsp (≈45 ml)
• Zest of 1 lemon
• Ground cinnamon — ¼ tsp
• Ground ginger — ½ tsp
• Salt — a pinch
Instructions:
1. Lightly toast the peanuts, almonds, walnuts, sunflower seeds, pumpkin seeds, and rolled oats in a dry pan.
2. Roughly chop the toasted nuts.
3. Soak the dried apricots, cranberries, and raisins in cold water for 10–15 minutes, then drain.
4. In a bowl, combine all the toasted nuts and seeds, coconut flakes, flax seeds, cinnamon, ginger, and salt.
5. Add the chopped dried fruits, 3 tbsp agave syrup, and zest of 1 lemon. Mix well.
6. Add 1 egg white and mix until everything comes together.
7. Press the mixture firmly into small molds (about 3 inches / 8 cm) or shape into cookies by hand.
8. Bake in a preheated oven at 350°F (180°C) for 15 minutes.
9. Let them cool completely — they will become crispier as they cool.
Bonus Aromatic Tea: Add 1–2 lemon slices, a few orange slices, apple chunks, 2 tbsp black loose-leaf tea, and 1 tsp dried mint to a teapot. Pour over 1 liter of boiling water and steep for 4–6 minutes.
Serving & Storage Store in an airtight container for up to 10 days.
