Baking:
âą 19 cm (7.5 in) round pan â greased + parchment on bottom
âą 170°C (340°F) â 40â45 minutes
Instructions
1. Apple base:
o Peel and coarsely grate half the apple (80 g).
2. Wet mix:
o Combine grated apple + 160 g cottage cheese + 3 eggs + salt + sweetener.
3. Dry mix:
o Mix 140 g rye flour + 30 g oat flour + œ tsp cinnamon.
o Extinguish â
tsp baking soda with 1 tbsp vinegar and add to wet mix.
4. Batter:
o Fold dry mix into wet until combined.
o Pour into greased pan with parchment.
o Top with drained cranberries first, then chopped walnuts.
5. Bake:
o 170°C (340°F) â 40â45 minutes (toothpick clean).
6. Chamomile tea:
o Add remaining apple slices + ginger + chamomile + mint to teapot.
o Pour boiling water, steep 5 minutes.
7. Serve:
