Delicious, healthy, and crunchy oat bars – no flour, no sugar! Toasted oats + dried fruits + nuts + banana + Jerusalem artichoke syrup + sugar-free dark chocolate glaze.
Recipe for cooking and ingredients:
• ½ cup rolled oats (40 g / 1.4 oz)
• 1 tbsp unsweetened cocoa powder
• 1 tbsp sesame seeds
• 1½ tbsp raisins
• 2½ tbsp prunes
• 2½ tbsp dried cranberries
• 2½ tbsp almonds – lightly toast and chop
• 2½ tbsp peanuts – lightly toast and chop
• 1 ripe banana – mash with a fork
• 1½ tbsp Jerusalem artichoke syrup
For chocolate glaze:
• ⅔ cup sugar-free dark chocolate (100 g / 3.5 oz)
• 1 tbsp coconut oil
For decoration:
• Nuts and dried fruits (optional)
Instructions
1. Soak dried fruits (raisins, prunes, cranberries) in cold water for 5 minutes, drain, chop prunes, cranberries, and raisins into pieces.
2. Lightly toast almonds and peanuts on a dry skillet, chop with a knife.
3. Toast ½ cup rolled oats on the skillet until fragrant.
4. Mix toasted oats + cocoa + sesame seeds + chopped dried fruits + chopped nuts + mashed banana + Jerusalem artichoke syrup.
5. Mix thoroughly by hand – the mixture should become sticky.
6. Form bars using molds or by hand.
7. Place on parchment and bake at 180°C for 20 minutes.
8. Melt ⅔ cup sugar-free dark chocolate + 1 tbsp coconut oil in a double boiler.
9. Drizzle or dip cooled bars in chocolate (use a piping bag if desired).
10. Decorate with nuts and dried fruits.
11. Chill in the fridge for 30 minutes.
