Moong Dal Pakora (2 ways)
Prep Time: 4–5 hours (soaking) + 15 minutes
Cooking Time: 15–20 minutes
Serves: 3–4
For Spices
Cumin (जीरा) - 1½ tsp
Coriander seeds (धनिया बीज) - 2 tbsp
Black pepper (काली मिर्च) - 1 tbsp
For Batter
Moong dal, skinless (मूंग दाल धुली) - 1 cup
Water (पानी) - a dash
Green Chilli, chopped (हरि मिर्च) - 2 nos
Ginger, chopped (अदरक) - 1 tbsp
Spinach, chopped (पालक) - ½ cup (optional)
Onion, chopped (प्याज़) - ½ cup
Curry Leaves (कड़ी पत्ता)- 10-12 leaves
Salt (नमक) - to taste
Turmeric Powder (हल्दी) - ¾ tsp
Chilli Powder (मिर्ची पाउडर) - 1½ tsp
Kasoori methi leaves (कसूरी मेथी) - a large pinch
Dry Mango Powder (अमचूर) - 2 tsp
Coriander, chopped (ताज़ा धनिया) - handful
Baking soda/powder or Eno (बेकिंग सोडा या पाउडर या ईनो) - 1 tsp
Oil (तेल) - for deep frying
METHOD
Step 1: Prepare the Spice Mix
1. Dry roast cumin, coriander seeds, and black pepper on low heat till aromatic.
2. Cool slightly and grind into a coarse powder. Keep aside.
Step 2: Prepare the Dal Batter
1. Soak moong dal for 4–5 hours. Drain completely.
2. Grind the dal using very little water to a coarse, thick batter. Do not make it smooth.
3. Transfer the batter to a bowl and whisk lightly to incorporate air.
Step 3: Flavour the Batter
1. Add green chilli, ginger, onion, curry leaves, coriander leaves, salt, turmeric, chilli powder, kasoori methi, dry mango powder, and the prepared spice mix.
2. Mix gently to combine.
3. Divide the batter into two portions.
* Keep one plain.
* Add chopped spinach to the second portion and mix lightly.
Step 4: Frying the Pakode
1. Heat oil in a kadhai on medium heat.
2. Just before frying, add baking soda / Eno to the batter and mix gently.
3. Drop small portions of batter into hot oil using your fingers or a spoon.
4. Fry on medium heat, turning occasionally, till golden and crisp.
5. Remove and drain on absorbent paper.
Step 5: Serve
Serve hot with green chutney, imli chutney, or ketchup, along with a cup of hot chai.
