TEXAS Chili | 50 States, 50 Plates (Ep.2)

Welcome to 50 States, 50 Plates where we are exploring America one plate at a time! This week we are in Texas and we went with their official state food, Texas Chili. It did NOT disappoint! Texas Chili Recipe: Ingredients (Serves 8) (we made about half of this) 1 tablespoon olive oil 1 large yellow onion, chopped 3 jalapeños, chopped (remove seeds for less heat) 5 garlic cloves, minced 2.5 pounds ground beef (85% lean recommended for flavor) 1 1/2 teaspoons salt 1 teaspoon black pepper 4 tablespoons chili powder 1 tablespoon dried oregano 3 tablespoons ground cumin 1 teaspoon ground coriander 3 ounces tomato paste (about half a small can) 28 ounces canned diced tomatoes (with juices) 2 cups beef stock (add more if you prefer a thinner chili) Instructions Heat the olive oil in a large Dutch oven or soup pot over medium heat. Add the chopped onion and jalapeños, stirring occasionally until the onions are translucent, about 6-8 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant. Add the ground beef, salt, and pepper. Break it up with a spoon as it cooks, leaving some larger chunks for texture. Cook for about 8 minutes until the beef is browned and no longer pink. If there's excess grease, drain some off. Sprinkle in the chili powder, oregano, cumin, and coriander. Stir well and cook for 1 minute to toast the spices. Mix in the tomato paste, diced tomatoes with their juices, and beef stock. Bring everything to a simmer. Reduce the heat to medium-low and let it cook for 30 minutes (or up to 1 hour for deeper flavor), stirring occasionally. The chili is ready when the liquid reduces to a thick, stew-like consistency.
