Zero waste watermelon 🍉 #shorts

1. Chocolate Watermelon Popsicles🍉🍦 Ingredients * ½ small watermelon * 150 g dark chocolate * 1 tsp coconut oil * Juice of ½ lime, optional * Tajín or chilli-lime seasoning * Wooden popsicle sticks Method 1. Cut the watermelon into thick, long slices and insert a wooden stick into each piece. 2. Squeeze over a little lime juice and freeze for 15 minutes. 3. Melt the chocolate with the coconut oil, then pour it into a tall glass. 4. Dip each watermelon slice into the chocolate and sprinkle with Tajín and lime zest 5. Refrigerate until the chocolate is firm. Storage Keep refrigerated for up to 2 days for soft watermelon and crunchy chocolate. Freeze for up to 1 month for a firmer popsicle. 2. Watermelon Brazilian Lemonade🍉🍋🧊 Ingredients * 500 g watermelon * 2 whole limes, washed and quartered * 250 ml cold water * 100 ml coconut milk or condensed coconut milk(the original one is with normal condensed milk ) * 1–2 tbsp honey or agave, optional * 2 cups ice Method 1. Blend the watermelon, whole lime pieces, water and half of the ice for 20–30 seconds. 2. Strain through a fine sieve or clean cloth. 3. Stir in the coconut milk or condensed coconut milk. 4. Add honey or agave if needed and serve with plenty of ice. Storage Keep refrigerated in a sealed bottle for up to 3 days. Shake well before serving. 3. Watermelon Rind Candy🍬🍉 Ingredients * 500 g watermelon rind * 250 g sugar Method 1. Remove the dark green outer skin, leaving the pale rind. 2. Cut into thin slices, around 1 cm thick. 3. Mix with the sugar and leave for 30 minutes. 4. Transfer everything to a pan and simmer gently until the rind becomes translucent and most of the syrup has evaporated. 5. Pat away excess moisture with paper towel. 6. Dehydrate at 40°C for around 10 hours, until dry outside but slightly soft inside. Storage Keep in an airtight container at room temperature for up to 1 week, or refrigerated for up to 3 weeks.
