The final chapter of our Flavours of Spiti expedition takes us on one of the most scenic drives in the Himalayas, from Kaza to Kalpa. But as always, this journey is about much more than the destination. It's about the people we meet, the stories they share, and the food that has sustained life in these mountains for generations. Our day begins at Sakya Abode Resort, where we are welcomed with a traditional Spitian breakfast. We witness the making of Tirik, a locally baked leavened bread, and enjoy a warm cup of Tsa Cha, a traditional beverage prepared with milk, butter and a decoction made from the bark of the khear tree. Sitting down with our gracious host, Tsering, we savour a wholesome meal of Thenthuk, Tsampa served with ghee and yogurt, and Konjos, while learning about the region's food traditions, local ingredients and the stories woven into everyday mountain life. The journey then brings us to a heartwarming reunion with Vishesh, the owner of Cafe Piti and Anubhav's college mate. Over conversations and coffee, we revisit old memories while reflecting on how life has brought us together again in the heart of Spiti. Our next stop is the fascinating Gue Monastery, home to the legendary naturally preserved mummy of a Buddhist monk believed to be over 500 years old. Hidden away in a quiet Himalayan village, the monastery offers a rare glimpse into the region's spiritual heritage and one of its most intriguing historical mysteries. Continuing our drive towards Kinnaur, we stop at Sumdo Cafeteria for a simple yet satisfying meal before making a quick halt at a roadside stall run by the Border Roads Organisation (BRO) to enjoy one of India's favourite snacks, a hot samosa amidst the mountains. As the sun begins to set, we finally arrive in the picturesque village of Kalpa, bringing the Flavours of Spiti expedition to a memorable close. While this marks the end of our road journey through Spiti, the stories, friendships and flavours we've discovered along the way will stay with us for years to come. If you enjoyed this episode, don't forget to like, share and subscribe to Delhi Food Walks for more journeys that celebrate food, culture and the people behind them.
